Pimm’s No. 1 Cup is enjoying a bit of a revival—even Parts & Labour, Toronto’s latest It spot, offers a version of the classic English cocktail. In honour of the Queen’s Canadian visit (and Canada Day weekend), we’re sharing our recipe for summer’s most refreshing drink.
You will need:
1 bottle Pimm’s No. 1 Cup (found in the liqueur aisle of the LCBO)
1 two-litre bottle of ginger ale or lemon soda
An assortment of sliced oranges, lemons, and cucumbers
Sprigs of fresh mint
Optional: A few splashes of Tanqueray or Hendrick’s gin
